To prepare your squid, cut into pieces: the head section can be cut into rings of approx. 1cm in thickness and the tentacles cut into equal sized pieces. Rince the squid in water.
Add some olive oil to a frying pan and wait for it to get nice and hot. Add lots of sliced garlic to the pan and when it just starts to colour add the squid. Toss the squid around in the hot pan for a minute or two which is all it will need to cook.
Season with salt and pepper and then add lemon juice, finely chopped parsely, or chilli flakes, to your liking.
Toss the ingredients around in the pan again just to mix it all through, take off the heat and serve with crusty bread and a salad.
