ONE DISH EASY CHICKEN ROAST

Our Chicken Casserole Pieces on the Bone are also very good roasted - tender, succulent and bursting with flavour.

Allow 1 piece per person and a selection of favourite vegetables as listed in the method below.
 

Preheat the oven to Gas 6/400°C.

Use a combination of vegetables that you enjoy, cut into fairly even sized pieces:
whole unpeeled new potatoes, halved and deseeded red peppers, aubergine in thick chunks, parsnips, carrots, whole shallots plus whole cloves of garlic.

Well coat the vegetables with olive oil.  Arrange the chicken pieces and vegetables in a roasting tin in a single layer.  Season with salt, pepper and tarragon.
 
Roast for about 50 - 60 minutes. (Turn the vegetables over after about 30 minutes to allow them to brown evenly).  When the chicken is pierced with a skewer the chicken juices should run clear.
