One Dish Easy Chicken Roast

A great hearty family favourite!

STEPS

  • Preheat the oven to Gas 6 / 200°C / 400°F
  • Use a combination of vegetables that you enjoy, cut into fairly even sized pieces:
    whole unpeeled new potatoes, halved and deseeded red peppers, aubergine in thick chunks, parsnips, carrots, whole shallots plus whole cloves of garlic.
  • Well coat the vegetables with olive oil. Arrange the chicken pieces and vegetables in a roasting tin in a single layer. Season with salt, pepper and tarragon.
  • Roast for about 50 - 60 minutes. (Turn the vegetables over after about 30 minutes to allow them to brown evenly). When the chicken is pierced with a skewer the chicken juices should run clear.
