Grown on the hills of the beautiful Exe Valley our white geese get to spread their wings every day in one of the most lovely spots in the West Country. We like to think that apart from all the exercise they are getting and fantastic grazing, maybe the view has something to do with their melting texture and depth of flavour!
Beautiful live, once dry plucked and hung they look stunning. With each goose we give full cooking instructions and our own recipe for apple, onion and prune stuffing, which perfectly compliments the fabulous rich flavour of the meat.
Fill the cavity with the stuffing and cook on a rack to allow any excess fat to run into the tray below. Remember to collect all the goose fat to create superb roast potatoes.
