BBQ Food - Laid back and easy

A great BBQ should be easy going and simple, with the emphasis on good company, fresh BBQ food and chilled drinks. Skim through these simple steps to the big day and you wont even break a sweat...and not a supermarket in sight!

Step 1. The Invites
From the outset, keep it casual with the invites – don’t chase your mates, let everyone sort it out themselves! Try a nifty online schedule tool like Doodle (doodle.com) to get everyone in sync.

Step 2. A Week To Go
Now is the time to start checking the weather forecast. If it looks dodgy, there always the option to postpone or shop for a gazebo! If it looks really bad, Doodle is perfect for rescheduling.
Check you have enough gas or charcoal to cook with, the BBQ is clean and serviceable with all the tools present.
Think about plates, cutlery and glasses. Or will it be burger in one hand, chilled bottle in the other?

Step 3. Order The Tucker

Step 4. The day before
Give that weather forecast one more go – if it still looks dodgy, think about going for the gazebo.
Now is a good time to make up any salad dressing - here are some ideas.
For marinades, some meats are better left overnight, so now is the time to prepare. Some great marinades can be found here
Start chilling the drinks. And if you need lots of ice on the day for a big beer bucket, fill up a few lunchboxes with water and put in the freezer - smashing up the ice from these is much easier than producing thousands of ice cubes.

Step 5. The morning of the big day
Visit the local green grocer and baker for salad and bread.
Garden furniture and lighting – make sure there are plenty of seats, and outside lighting for later.
Unless you have a DJ on hand, music is best handled by some speakers plugged into an ipod – create a lazy chilled summer playlist to get everyone in the right vibe.
Prepare a water spray bottle - flames from dripping grease give food a bitter, charred taste, so keep this on hand to stop any problems

Step 6. Time to cook
Get the food ready for the grill, Remove the meat from the fridge an hour before cooking. This will bring it up to an ambient temperature, and ensures full flavour cooking. Be sure to keep the meat covered, and out of direct sunlight.
Add flavour to your meat and keep it tender by marinating for at least 20 mins

Step 7: Lighting the BBQ.
If you have gas, no worries! But if you have charcoal, hopefully its dry. Using lighter fluid or bricks can taint the food flavour, so try using just newspaper. Scrunch up a few sheets and build a pyramid of charcoal bricks over the paper. The size should be so that when you eventually spread them out they cover the cooking area of the BBQ. Light the paper, and give it about 20 - 30 minutes. Look for the charcoal to go white on most of the surface. Spread out the charcoal, close the lid for a final 5 minutes, then you are ready to go.

Step 8: Cooking the BBQ Food
Keep the grill a reasonable hight above the coals, so the heat cooks through before any sign of charring. Keep an inch or so around all the BBQ meat so it cooks evenly.
Make sure you ask your guests how they like it their food cooked, but ensure you have the final say as to when it's ready. Relax - the quality meat and your preparations mean that in no time your guests will be in taste heaven, and your status as a BBQ guru is instantly awarded. Go get that beer and turn up the music!
