If you are looking to buy beef online but have not tried ours before, here's a little introduction so that you know exactly what will be delivered!

All of our beef is pure Red Ruby, a breed native to the South West of Britain, particularly Devon. The Red Ruby is a distinctive red colour, and is supposedly one of the oldest beef breeds in existence. It has become much less popular in modern times due to the increase in demand for rapidly growing continental breeds. We fully believe that the quality of beef from a slower maturing breed such as the Red Ruby is far superior- we grow our cattle for three years, letting them reach natural maturity on a grass fed diet.

The balance of fat is a vital factor in the flavour of the meat and unlike modern breeds, the Devon Red Ruby naturally lays down intra-muscular fat which produces wonderful marbling with a fine texture. So even if you don't like fat on your beef, there really is no need to buy it, as you can have great flavour without it! All of our beef is hung for four full weeks, which further develops the depth of flavour and creates a magical tenderness.

It has felt very natural for us to cook our meat at ‘Timepiece’ in Exeter. Not least because our son Will is working with us for a few months having finished his degree at Cardiff. Both he and Ed, our eldest son, have been living proof of how well we can provide wholesome and convenient food that is a really important part of student life.
