Does choosing an online butcher mean sacrificing advice? At Pipers Farm we think not, and gladly extend the ethics of our friendly shop service to our online customers and visitors. I've put together some of the most popular advice below, but we'd love to hear from you if there is anything further we can help with.

1. Do You Like Eating Fat?

If not then you do not need to pay for it from Pipers Farm! Our animals all grow slowly and reach natural maturity – that is when they develop marbling fat: these are fine strands of fat within the muscle. These cook out and help to add flavour but you don't feel like you are actually eating fat.

2. Do You Like To Eat Meat Rare Or More Well Done?

It is a matter of personal taste, but we would always encourage our customers to eat our meat without overcooking it. There is no need to cook our meat to “make it safe”. The only reason to cook Pipers Farm meat is to enhance the eating sensation, so that it is an absolute pleasure. Clear, simple cooking guidelines are on every pack.

3. Select A Cut Depending On How You Want To Cook

Some cuts are better suited to cooking for longer if that is how you prefer it. Red Ruby Silverside can be cooked for longer than Red Ruby Topside. Slow-roasting in a casserole on a bed of root vegetables is the best way to cook to “well done”. Red Ruby Brisket or Oxtail are perfect for this.

4. Give It A Rest

After cooking, “Resting” meat is very important – it allows the cooking juices to “settle” within the joint, and the flavour develops as it cools slightly.

5. Carve Thinly

Our Red Ruby silverside and topside benefits from some careful carving, so take a few moments to sharpen that knife. If cooked rare, a thin slice is as good as a lot of Fillet you might buy!

6. Buy The Size You Need

Our meat is always slowly grown and properly hung so it doesn't shrink when you cook it. Our shop pages always give a guide on quantities to allow.

7. Double The Pleasure

Always buy meat to allow enough so you can have some of the joint for a cold meal on another day.

8. Plan Ahead

Our “ready to cook” packaging means that each portion is packed separately. Steaks for example can be taken out singly and dropped into cool water so that they can be cooked in less than half an hour...and there is no waste.

9. Try Our Prepared Meats And Meals.

Most of our burgers, some sausages and many of our ready cooked meals are Gluten-Free. Our ready meals are cooked just like you would at home!

Red Ruby beef cattle are native to Exmoor. We grow them slowly up on Exmoor and down on the Somerset Levels, until they are 3 years old and naturally mature. We kill them in a very small local Artisan abattoir. We hang the carcases in the traditional way, on the bone for a month. We always love family gatherings at Easter & we are particularly looking forward to it this year & it will mark the end of what has felt like a very long winter! The daffodils and camellias have just started to bloom so spring must be just around the corner! The longer days certainly give a much more relaxed feeling to the impending arrival of the family...

Following the huge success of the Simplest Turkey at Christmas, we are getting orders for the Simplest Turkey for Easter.
